- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup unsalted butter, melted
- 2 (8 ounce) packages cream cheese, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup unsweetened cocoa powder
- 1/4 cup heavy cream
- Black food coloring
- Edible glitter (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch round springform pan.
- In a small bowl, combine chocolate cookie crumbs and melted butter. Press mixture into the bottom of the prepared pan to form a crust. Bake for 8-10 minutes. Let cool.
- In a large bowl, beat cream cheese and granulated sugar until smooth.
- Beat in eggs one at a time, then stir in vanilla extract.
- In a separate small bowl, whisk together cocoa powder and heavy cream until smooth. Add black food coloring until desired dark color is achieved.
- Gently fold the chocolate mixture into the cream cheese mixture until just combined. Do not overmix.
- Pour the cheesecake filling over the cooled crust.
- Bake for 50-60 minutes, or until the center is almost set.
- Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
- Remove from oven and let cool completely on a wire rack.
- Chill in the refrigerator for at least 4 hours, or preferably overnight.
- Before serving, decorate your witch’s cauldron cheesecake with edible glitter if desired for a magical touch.
