Rich, chewy, and absolutely delicious white chocolate blondies that are super easy to make.

- 225 g butter (melted and cooled)
- 340 g light brown or demerara sugar
- 2 eggs
- 285 g plain (all-purpose) flour
- 100 g white chocolate chips
Instructions
- Preheat your oven to 180°C (356°F) and line a 9-inch (23 cm) square baking tin with parchment paper.
- In a medium-sized bowl, combine the sugar and eggs, stirring until well mixed.
- Melt the butter either on the stove or in the microwave, then allow it to cool. Slowly pour the melted butter into the egg and sugar mixture while mixing.
- Add the flour to the mixture and blend until fully incorporated.
- Stir in the white chocolate chips until evenly distributed.
- Pour the batter into the prepared pan, smoothing the top. Optionally, sprinkle some sea salt on top.
- Bake in the preheated oven for about 25 minutes, or until the edges are set and the top is lightly golden.
- Once baked, allow to cool completely in the pan before lifting out and cutting into 9 equal squares.
Notes
Store the blondies in an airtight container at room temperature for up to 5 days or freeze wrapped tightly for up to 3 months. For added flavor, mix in nuts or use high-quality chocolate.
