Ingredients
Scale
- 4 pieces Croissants
- 1 cup Ricotta
- 1/4 cup Cream Cheese
- 1 tablespoon Vanilla Bean Paste
- 1/4 cup Honey
- 2 tablespoons Butter
- 1 tablespoon Lavender Flowers
- 1 tablespoon Thyme Leaves
Instructions
- In a food processor, combine ricotta, cream cheese (if using), and vanilla bean paste. Pulse for 1-2 minutes until light and fluffy. Transfer to a piping bag.
- Preheat the broiler to medium. Place cut sides of croissants facing up on a baking sheet and toast for 2-3 minutes until golden. Remove and cool slightly.
- Arrange toasted croissant halves on plates and pipe the whipped ricotta, creating soft peaks or swirls.
- In a small saucepan, melt butter over medium heat. Add honey and stir continuously for 3-5 minutes until it darkens slightly without burning.
- Drizzle warm burnt honey over the whipped ricotta on croissants. Scatter fresh lavender and thyme leaves as garnish before serving.
Notes
- Consider swapping croissants for bagels for a different texture experience.
- Whole milk ricotta is best for whipping.
- Maple syrup can be swapped for a unique twist.
- Use fresh or dried culinary lavender.
- Aromatic depth with thyme leaves; feel free to skip.
