Ingredients

- 9 lasagna noodles
- 2 cups ricotta cheese
- 1 egg
- 2 cups mozzarella cheese, shredded
- 1 cup parmesan cheese, grated
- 4 cups spinach
- 2 zucchini, sliced
- 1 bell pepper, chopped
- 2 cups marinara sauce
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Boil the lasagna noodles according to package instructions, then drain.
- In a bowl, mix ricotta cheese with the egg, and season with salt and pepper.
- Layer a bit of marinara sauce at the bottom of a baking dish.
- Add three lasagna noodles, followed by half of the ricotta mixture, spinach, zucchini, and marinara sauce.
- Repeat the layers, finishing with noodles and marinara sauce.
- Top with mozzarella and parmesan cheese.
- Bake for 30-35 minutes until golden and bubbly.
Notes
Let the lasagna sit for 10 minutes before slicing for easier serving.
