- 8 oz wide egg noodles
- ¼ cup low-sodium soy sauce
- 1 tbsp sesame oil
- 6 cups chicken broth (homemade or store-bought)
- 2 cups spinach or bok choy
Instructions
- Prep your ingredients: mince garlic and ginger, slice carrots.
- In a large pot over medium heat, drizzle sesame oil and sear chicken until golden brown (about 5 minutes per side).
- Add minced garlic and ginger; cook until fragrant (about 1 minute).
- Pour in chicken broth and soy sauce; bring to a gentle boil then reduce heat to simmer.
- Add sliced carrots and cook until tender (about 10 minutes), stirring occasionally.
- Stir in egg noodles and cook according to package instructions until al dente (approximately 6-8 minutes).
- Just before serving, fold in chopped spinach or bok choy until wilted.
- Serve hot topped with green onions for added flavor.
