- 2 cups whole milk
- 2 large egg yolks
- 2 tablespoons granulated sugar
- 1 teaspoon pure vanilla extract
- Pinch of salt
- Optional toppings: whipped cream, ground cinnamon, grated nutmeg, or a cinnamon stick for stirring
Instructions
- Carefully separate the egg yolks from the whites. You’ll only be using the yolks in this recipe.
- In a small bowl, whisk together the egg yolks, sugar, and a pinch of salt until smooth and slightly pale.
- In a small saucepan over medium heat, warm the milk until it’s steaming but not boiling. Stir occasionally to prevent a skin from forming.
- Slowly pour about ½ cup of the warm milk into the egg mixture while whisking constantly. This helps prevent the eggs from scrambling.
- Slowly pour the tempered egg mixture back into the saucepan with the remaining milk. Reduce heat to low and cook, stirring constantly, until the mixture thickens slightly, about 5-7 minutes.
- Remove from heat and stir in the vanilla extract. Pour into mugs, top with whipped cream or cinnamon if desired, and enjoy warm.
