Ingredients
- Mixed greens: 4 cups
- Cucumber: 1 medium, diced
- Cherry tomatoes: 1 cup, halved
- Carrots: 1 medium, grated
- Red onion: ΒΌ medium, thinly sliced
- Avocado: 1 medium, sliced
- Chickpeas: 1 can (15 oz), drained and rinsed
- Olive oil: 3 tbsp
- Lemon juice: 2 tbsp
- Salt & Pepper: to taste
- Fresh herbs: optional
Instructions
- In a bowl, combine greens, cucumber, tomatoes, carrots, onion, and avocado.
- Add chickpeas and mix gently.
- In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
