- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 2 tablespoons almond butter
- 2–3 tablespoons maple syrup (adjust to desired consistency)
- 1 1/2 teaspoons cinnamon
- 4 ounces room temperature plain cream cheese (dairy free or regular)
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
- 1/2 cup powdered sugar
Instructions
- In a small bowl, whisk together almond butter, maple syrup, and cinnamon until smooth. Adjust the amount of maple syrup to achieve a swirliable consistency.
- In a separate large bowl, whisk together the egg, apple sauce, 2 tablespoons maple syrup, milk, and vanilla extract until well combined.
- Sift or whisk together oat flour, gluten free all-purpose baking flour, baking powder, salt, and cinnamon. Gradually add these dry ingredients to the wet ingredients and whisk until a smooth batter forms.
- Place a large non-stick skillet over medium-low heat and allow it to warm up thoroughly before cooking.
- Using a 1/4 or 1/3 cup measure, pour batter onto the skillet and gently smooth out the top. Then, drizzle the prepared cinnamon swirl mixture over the batter.
- Cook the pancakes for approximately 2 minutes or until bubbles form on the surface and the edges appear set.
- Carefully flip the pancakes and cook the other side for an additional 1 to 2 minutes until golden and cooked through.
- Transfer cooked pancakes to a wire rack to cool slightly while cooking the remaining batter.
- In a bowl, whisk together room temperature cream cheese, milk, vanilla extract, and powdered sugar until smooth and creamy.
- Drizzle the cream cheese glaze over the warm pancakes and enjoy!
