  • 2 tablespoons maple syrup
  • 2/3 cup milk of choice (almond milk used)
  • 1 teaspoon vanilla extract
  • 3/4 cup oat flour
  • 3/4 cup gluten free all purpose baking flour (can substitute regular flour)
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 2 tablespoons almond butter
  • 23 tablespoons maple syrup (adjust to desired consistency)
  • 1 1/2 teaspoons cinnamon
  • 4 ounces room temperature plain cream cheese (dairy free or regular)
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • 1/2 cup powdered sugar

Instructions

  1. In a small bowl, whisk together almond butter, maple syrup, and cinnamon until smooth. Adjust the amount of maple syrup to achieve a swirliable consistency.
  2. In a separate large bowl, whisk together the egg, apple sauce, 2 tablespoons maple syrup, milk, and vanilla extract until well combined.
  3. Sift or whisk together oat flour, gluten free all-purpose baking flour, baking powder, salt, and cinnamon. Gradually add these dry ingredients to the wet ingredients and whisk until a smooth batter forms.
  4. Place a large non-stick skillet over medium-low heat and allow it to warm up thoroughly before cooking.
  5. Using a 1/4 or 1/3 cup measure, pour batter onto the skillet and gently smooth out the top. Then, drizzle the prepared cinnamon swirl mixture over the batter.
  6. Cook the pancakes for approximately 2 minutes or until bubbles form on the surface and the edges appear set.
  7. Carefully flip the pancakes and cook the other side for an additional 1 to 2 minutes until golden and cooked through.
  8. Transfer cooked pancakes to a wire rack to cool slightly while cooking the remaining batter.
  9. In a bowl, whisk together room temperature cream cheese, milk, vanilla extract, and powdered sugar until smooth and creamy.
