- 2 medium butternut squashes
- 1 cup quinoa (cooked)
- 1/2 cup cranberries (dried)
- 1/2 cup walnuts (chopped)
- 1/4 cup feta cheese (crumbled)
- Olive oil
- Salt and pepper
- 1 medium sweet potato (peeled and cubed)
- 1 can chickpeas (drained and rinsed)
- 1/4 cup tahini
- 2 tbsp olive oil
- Juice of 1 lemon
- Garlic clove (optional)
- 1 whole turkey (about 14–16 lbs)
- 2 cups cranberry sauce
- 2 oranges (juiced and zested)
- 1/2 cup honey
- 1/4 cup soy sauce
- 1 cup stuffing mix
- 1 cup chicken broth
- 1 lb Brussels sprouts (halved)
- 1/4 cup maple syrup
- 2 tbsp balsamic vinegar
- 1 head of cauliflower (cut into florets)
- 2 cloves of garlic (minced)
- 1/4 cup cream cheese
- 1/4 cup Parmesan cheese
- 4 cups mixed greens
- 1 cup cranberries
- 1/2 cup pistachios (halved)
- 1/4 cup feta cheese (optional)
- Balsamic vinaigrette (for dressing)
- 1 pre-made graham cracker crust
- 2 packages cream cheese (softened)
- 1 cup sugar
- 1 cup pumpkin puree
- 3 eggs
- 1 tsp vanilla extract
- 1 tsp cinnamon
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the butternut squashes in half lengthwise, scoop out the seeds, and brush them with olive oil, salt, and pepper. Roast face-down for about 25-30 minutes until tender.
- Mix together the cooked quinoa, cranberries, walnuts, and feta cheese. Fill the roasted squash halves and pop them back in the oven for another 10-15 minutes.
- Boil the sweet potato cubes until tender (about 15 minutes). Blend with chickpeas, tahini, olive oil, lemon juice, and garlic until smooth. Season with salt and pepper to taste.
- Preheat your oven to 350°F (175°C). Mix cranberry sauce, orange juice, honey, and soy sauce. Rub turkey with salt and pepper, stuff it with stuffing mix, and pour the orange glaze over it. Roast for about 3-4 hours, basting every 30 minutes.
- Preheat the oven to 400°F (200°C). Toss Brussels sprouts with maple syrup, balsamic vinegar, salt, and pepper. Roast for about 25-30 minutes, shaking halfway through.
- Steam the cauliflower until tender (6-8 minutes). Blend with minced garlic, cream cheese, Parmesan, salt, and pepper until smooth. Adjust seasoning.
- Toss mixed greens, cranberries, pistachios, and optional feta in a salad bowl. Drizzle with balsamic vinaigrette before serving.
- Preheat your oven to 350°F (175°C). Beat cream cheese and sugar until smooth. Add pumpkin puree, eggs, vanilla, and cinnamon. Pour into graham cracker crust, swirl, and bake for 45 minutes until set. Chill before serving.
