- 1 cup mascarpone cheese
- 1/2 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 cup strong brewed coffee (cooled)
- 1 tablespoon coffee liqueur (optional)
- For Garnish:
- Cocoa powder (for dusting)
- Chocolate shavings (optional)
Instructions
- In a mixing bowl, whisk together the flour, eggs, milk, granulated sugar, vanilla extract, and salt until smooth. Stir in the melted butter.
- Let the batter rest for about 15 minutes to allow the flour to hydrate.
- Heat a non-stick skillet or crepe pan over medium heat. Lightly grease with butter or oil.
- Pour about 1/4 cup of batter into the skillet, swirling to coat the bottom evenly. Cook for about 1–2 minutes until the edges start to lift and the bottom is lightly golden. Flip and cook for another 1 minute. Repeat with the remaining batter, stacking the cooked crepes on a plate.
- In a mixing bowl, whip the heavy cream until soft peaks form.
- In another bowl, combine the mascarpone cheese, powdered sugar, vanilla extract, brewed coffee, and coffee liqueur (if using). Fold the whipped cream into the mascarpone mixture until smooth and well combined.
- Place a crepe on a clean surface. Spread a generous layer of the tiramisu filling over the crepe.
- Starting from one end, roll the crepe tightly around the filling. Repeat with the remaining crepes and filling.
- Slice the crepe rolls into bite-sized pieces. Dust with cocoa powder and garnish with chocolate shavings if desired.
