Description

  • 1 tsp vanilla extract (Flavor)
  • 1 1/2 cups all-purpose flour (Sifted)
  • 1/2 tsp baking soda (Leavening)
  • 1/4 tsp salt (Balances flavor)
  • 8 oz mascarpone cheese (Cold)
  • 1/2 cup heavy cream (Cold)
  • 1/2 cup powdered sugar (For frosting)
  • 2 tbsp cocoa powder (Unsweetened for dusting)

Instructions

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. Cream butter, brown sugar, and granulated sugar until fluffy.
  3. Mix in the egg, vanilla, and dissolved espresso powder.
  4. Stir in flour, baking soda, and salt until a soft dough forms.
  5. Scoop dough onto baking sheets and bake for 10–12 minutes; let cool completely.
  6. Whip mascarpone, heavy cream, powdered sugar, and vanilla until stiff peaks form.
  7. Pipe a swirl of frosting onto each cooled cookie and dust with cocoa powder.
