Ingredients

  • 2 slices seed wheat bread
  • Salted butter, softened
  • Prepared pesto
  • 2 slices sliced Pepper Jack cheese
  • 1/2 avocado, sliced thin
  • 2 slices sliced Swiss cheese
  • 2 slices sliced Provolone cheese

Instructions

  1. Start by gathering all your ingredients. Dice your avocado to ensure even spreading and have your butter softened for easy application.
  2. Spread a thin layer of butter on one side of both slices of bread.
  3. On the non-buttered side of one slice, spread a generous layer of pesto.
  4. Layer 2 slices of Pepper Jack cheese on top of the pesto, then add the avocado slices, followed by Swiss and Provolone cheese. Place the other slice of bread on top, buttered side out.
  5. Preheat your frying pan over low heat.
  6. Cook the sandwich in the pan for about 3-4 minutes on each side or until the bread is golden brown and the cheese has melted.
  7. Let it sit for a minute before cutting and serve.
