Ingredients

  • 1/4 cup granulated sugar

  • 2 cups milk
  • 2 large eggs, lightly beaten
  • 1/4 cup unsalted butter, melted and cooled
  • 2 teaspoons pure vanilla extract
  • 1 1/2 cups fresh mixed berries
  • 1 cup semi-sweet chocolate chips (optional)
  • 1 cup all-purpose flour (for streusel)
  • 1/2 cup light brown sugar, packed (for streusel)
  • 1 teaspoon ground cinnamon (for streusel)
  • 1/2 cup unsalted butter, very cold and cubed (for streusel)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together 2 cups white flour, 1/4 cup granulated sugar, 1 tbsp baking powder, 1 tsp baking soda, and 1/2 tsp salt.
  3. In a separate medium bowl, whisk together 2 cups milk, 2 lightly beaten large eggs, 1/4 cup melted and cooled unsalted butter, and 2 tsp vanilla extract.
  4. Pour wet ingredients into dry. Gently mix until just combined, being careful not to overmix. Lumps are fine.
  5. In a medium bowl, combine 1 cup all-purpose flour, 1/2 cup packed light brown sugar, and 1 tsp ground cinnamon. Cut in 1/2 cup very cold, cubed unsalted butter until mixture resembles coarse crumbs.
  6. Spread half of the pancake batter into the prepared baking dish. Sprinkle half of the fresh mixed berries and chocolate chips (if using) over the batter. Spoon the remaining batter over the filling, spreading gently. Optionally, sprinkle remaining berries and chocolate chips on top.
  7. Generously crumble the prepared streusel topping evenly over the batter. Bake for 30-40 minutes, or until the streusel is golden brown and a wooden skewer inserted into the center of the pancake comes out clean.
  8. Remove from oven and let cool on a wire rack for 10-15 minutes before slicing and serving. Garnish with warm maple syrup, powdered sugar, or whipped cream as desired.
