Ingredients

  • 100 g caster sugar (or granulated sugar)
  • 75 g soft light brown sugar (dark brown sugar can be used as a substitute)
  • 1 medium egg (or a flax egg for vegan)
  • 1 tsp orange extract (or fresh orange zest)
  • 200 g self-raising flour (or all-purpose flour plus 1 tsp baking powder per cup)
  • 30 g cocoa powder (carob powder can be used as a caffeine-free alternative)
  • 1 large Terry’s Chocolate Orange (any milk chocolate with citrus notes can substitute)
  • 100 g dark chocolate chips (swap for milk chocolate chips or dairy-free options if preferred)
  • 1 tbsp gold star sprinkles (or any colorful sprinkles)
  • 1 tbsp orange zest (or lemon zest for a different citrus kick)

Instructions

  1. Preheat your oven to 180°C (or 160°C for fan ovens) and line your baking trays with baking paper.
  2. In a large bowl, mix the softened butter with caster sugar and soft light brown sugar until creamy.
  3. Add the medium egg and orange extract, mixing until smooth.
  4. Stir in the self-raising flour and cocoa powder until a dough forms.
  5. Chop the majority of the Terry’s Chocolate Orange and knead it into the dough with the dark chocolate chips.
  6. Roll the dough into about 12 balls, spaced evenly on the tray.
  7. Bake for 11-12 minutes until edges are firm.
  8. While warm, press a segment of Chocolate Orange onto each cookie, then sprinkle with gold star sprinkles and orange zest.
  9. Let cookies cool completely on trays before serving.
