- 200 g self-raising flour (or all-purpose flour plus 1 tsp baking powder per cup)
- 30 g cocoa powder (carob powder can be used as a caffeine-free alternative)
- 1 large Terry’s Chocolate Orange (any milk chocolate with citrus notes can substitute)
- 100 g dark chocolate chips (swap for milk chocolate chips or dairy-free options if preferred)
- 1 tbsp gold star sprinkles (or any colorful sprinkles)
- 1 tbsp orange zest (or lemon zest for a different citrus kick)
Instructions
- Preheat your oven to 180°C (or 160°C for fan ovens) and line your baking trays with baking paper.
- In a large bowl, mix the softened butter with caster sugar and soft light brown sugar until creamy.
- Add the medium egg and orange extract, mixing until smooth.
- Stir in the self-raising flour and cocoa powder until a dough forms.
- Chop the majority of the Terry’s Chocolate Orange and knead it into the dough with the dark chocolate chips.
- Roll the dough into about 12 balls, spaced evenly on the tray.
- Bake for 11-12 minutes until edges are firm.
- While warm, press a segment of Chocolate Orange onto each cookie, then sprinkle with gold star sprinkles and orange zest.
- Let cookies cool completely on trays before serving.
