- 1 pound Ground Chicken (or turkey)
- 1 cup Crushed Pineapple (well-drained)
- 1 cup Panko Breadcrumbs (or regular breadcrumbs)
- 1 medium Red Bell Pepper (diced; optional)
- 1 tablespoon Fresh Ginger (grated)
- 2 cloves Garlic (minced)
- 1/2 cup Reduced Sodium Soy Sauce (or Tamari for gluten-free)
- 1/4 cup Brown Sugar (can substitute with honey or monk fruit)
- 2 tablespoons Corn Starch (to thicken)
- 1/2 cup Water (or chicken broth)
- 2 tablespoons Scallions (Green Onions) (finely chopped)
Instructions
- Preheat the oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
- Combine ground chicken, crushed pineapple, diced red bell pepper, panko breadcrumbs, chopped scallion, minced garlic, grated ginger, salt, and pepper in a large mixing bowl.
- Shape the mixture into approximately 22 meatballs and place them on the prepared baking sheet.
- Bake the meatballs for 20-25 minutes until golden brown and cooked through.
- In a skillet over medium heat, whisk together reserved pineapple juice, water, soy sauce, brown sugar, minced garlic, and grated ginger.
- Thicken the sauce by mixing corn starch with a bit of water to form a slurry and adding it to the skillet.
- Stir until the sauce thickens to your desired consistency.
- Toss the baked meatballs gently in the teriyaki sauce to coat them evenly before serving.
