Description

Ingredients

  • 1 pork tenderloin
  • 1 cup breadcrumbs
  • 1/2 cup cranberries
  • 1/2 cup chopped nuts (pecans or walnuts)
  • 1/4 cup parsley, chopped
  • 2 cloves garlic, minced
  • 1 tsp thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1/2 cup chicken broth
  • 2 tbsp balsamic vinegar

Instructions

  1. Butterfly the pork tenderloin by making a lengthwise cut down the side without cutting through.
  2. In a mixing bowl, combine breadcrumbs, cranberries, nuts, parsley, garlic, thyme, salt, and pepper.
  3. Spread the filling mixture over the opened tenderloin and roll it up tightly, securing with kitchen twine.
  4. Heat olive oil in a skillet over medium-high heat, and sear the rolled tenderloin until browned on all sides.
  5. Place the tenderloin in a baking dish, adding chicken broth and balsamic vinegar, and bake until the internal temperature reaches 145°F (63°C), about 30 minutes.
  6. Let it rest for 10 minutes before slicing to retain juices.
