- 1 pork tenderloin
- 1 cup breadcrumbs
- 1/2 cup cranberries
- 1/2 cup chopped nuts (pecans or walnuts)
- 1/4 cup parsley, chopped
- 2 cloves garlic, minced
- 1 tsp thyme
- Salt and pepper to taste
- 2 tbsp olive oil
- 1/2 cup chicken broth
- 2 tbsp balsamic vinegar
Instructions
- Butterfly the pork tenderloin by making a lengthwise cut down the side without cutting through.
- In a mixing bowl, combine breadcrumbs, cranberries, nuts, parsley, garlic, thyme, salt, and pepper.
- Spread the filling mixture over the opened tenderloin and roll it up tightly, securing with kitchen twine.
- Heat olive oil in a skillet over medium-high heat, and sear the rolled tenderloin until browned on all sides.
- Place the tenderloin in a baking dish, adding chicken broth and balsamic vinegar, and bake until the internal temperature reaches 145°F (63°C), about 30 minutes.
- Let it rest for 10 minutes before slicing to retain juices.
