Description
A homemade version of the popular Taco Bell Beefy Melt Burrito, filled with seasoned beef, refried beans, rice, Fritos, cheese sauce, and sour cream.
Ingredients

- 1 pound lean ground beef
- 1 (1 oz) packet taco seasoning
- ¼ cup water or beef broth
- 1 cup refried beans
- 2 cups cooked Mexican rice
- 4 burrito-sized flour tortillas
- 2 cups Fritos or Doritos
- 1 cup cheese dip (like Tostitos)
- 1 cup shredded Mexican cheese blend
- ½ cup sour cream
- Salsa (optional)
Instructions
- Cook the beef in a sauté pan, breaking it apart until no longer pink. Add taco seasoning and water, stirring for another minute. Stir in refried beans.
- Cook Mexican rice according to package instructions or warm leftover rice.
- Heat tortillas in the microwave for 30 seconds.
- Assemble burritos by adding the meat mixture, rice, Fritos, cheese dip, shredded cheese, and sour cream. Fold the sides in and roll into a burrito.
- Serve as is or heat in a pan over medium heat to toast the outside.
