Description
Transform leftover watermelon rinds into deliciously sweet and chewy candies that are perfect for summer snacking or as unique dessert toppings.

- 1 big watermelon (only using the rinds)
- 4 cups sugar
- 6 cups water
- 1 lemon or lime
- A little vanilla (optional)
- A pinch of salt
- 1 cinnamon stick (optional)
Instructions
- Slice the green skin off the watermelon rind, leaving only the white part. Cut the rinds into small rectangles or squares.
- Soak the rind pieces in water for about 30 minutes.
- Boil the rinds in a large pot of fresh water for about 10 minutes until they start to turn translucent.
- Drain the rinds.
- In a saucepan, combine sugar, citrus juice, and a pinch of salt. Bring to a simmer.
- Add the rinds to the saucepan and simmer on low heat for about 1 hour, stirring occasionally, until they become glossy and see-through.
- Spread the rinds on a cooling rack to dry.
Notes
Store your candied rinds in an airtight container. They last a couple of weeks but are best enjoyed fresh. Adding citrus zest while cooking boosts the flavor significantly.
