Description

Transform leftover watermelon rinds into deliciously sweet and chewy candies that are perfect for summer snacking or as unique dessert toppings.


Ingredients

Scale
  • 1 big watermelon (only using the rinds)
  • 4 cups sugar
  • 6 cups water
  • 1 lemon or lime
  • A little vanilla (optional)
  • A pinch of salt
  • 1 cinnamon stick (optional)

Instructions

  1. Slice the green skin off the watermelon rind, leaving only the white part. Cut the rinds into small rectangles or squares.
  2. Soak the rind pieces in water for about 30 minutes.
  3. Boil the rinds in a large pot of fresh water for about 10 minutes until they start to turn translucent.
  4. Drain the rinds.
  5. In a saucepan, combine sugar, citrus juice, and a pinch of salt. Bring to a simmer.
  6. Add the rinds to the saucepan and simmer on low heat for about 1 hour, stirring occasionally, until they become glossy and see-through.
  7. Spread the rinds on a cooling rack to dry.

Notes

Store your candied rinds in an airtight container. They last a couple of weeks but are best enjoyed fresh. Adding citrus zest while cooking boosts the flavor significantly.
