- 1 cup fresh or frozen cranberries
- ½ cup chicken broth
- ½ cup honey
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh parsley, for garnish (optional)
Instructions
- Season the chicken breasts with salt, pepper, garlic powder, and onion powder on both sides.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the seasoned chicken breasts to the skillet and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the cranberries, chicken broth, honey, and soy sauce. Stir to combine and bring to a simmer.
- Allow the mixture to simmer for about 5-10 minutes, until the cranberries burst and the glaze thickens slightly.
- Return the cooked chicken to the skillet, coating it with the cranberry glaze. Cook for an additional 2-3 minutes to heat through.
- Remove from heat and garnish with fresh parsley, if desired.
- Transfer the chicken to a serving platter, drizzling any remaining glaze over the top.
