These soft, fluffy Sweet Potato Dinner Rolls are a delightful twist on a classic. Infused with the subtle sweetness and rich color of mashed sweet potato, they are perfect for any family dinner or holiday feast. Easy to make, these rolls add a wonderful richness and tender texture to your meal.

Ingredients

Scale
  • 1 cup mashed and cooked sweet potato
  • 4 cups all-purpose flour
  • 1 cup warm milk
  • 1/4 cup melted unsalted butter
  • 1/3 cup sugar
  • 1 teaspoon salt
  • 1 packet active dry yeast (2 1/4 teaspoons)
  • 2 large eggs

Instructions

  1. Prepare the sweet potato: Cook and mash until smooth. Set aside.
  2. Activate yeast: Mix warm milk with yeast and sugar. Let sit for 5 minutes until bubbly.
  3. Combine ingredients: In a bowl, mix mashed sweet potato, melted butter, eggs, and salt with the activated yeast mixture. Stir well.
  4. Mix dough: Gradually add flour to form a sticky dough.
  5. Knead: On a floured surface, knead for about 8 minutes until smooth.
  6. First rise: Place dough in a greased bowl, cover, and let rise for 1-2 hours.
  7. Shape rolls: Punch down the dough, divide, and shape into 12-15 rolls.
  8. Second rise: Place shaped rolls on a baking sheet, cover, and let rise for another 30 minutes.
  9. Preheat oven: Set oven to 375°F (190°C).
  10. Bake: Bake for 20-25 minutes, or until golden brown.

Notes

  • For quicker cooking, peel and cube the sweet potato before cooking.
  • It’s okay if the dough is slightly sticky; avoid adding too much extra flour.
  • Baking times may vary; check rolls at 20 minutes.
  • For freezing, shape the rolls, then freeze. Thaw and let rise before baking.
  • Brush with melted butter immediately after baking for extra flavor.
