Ingredients

  • 1.5 pounds boneless, skinless chicken thighs or breasts
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon minced garlic
  • 1 tablespoon grated ginger
  • 1 cup fresh pineapple chunks
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/2 onion, sliced
  • 2 tablespoons vegetable oil
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Green onions, for garnish
  • Sesame seeds, for garnish

Instructions

  1. In a bowl, combine pineapple juice, soy sauce, brown sugar, garlic, and ginger. Add the chicken and marinate for at least 30 minutes.
  2. Heat vegetable oil in a large skillet over medium-high heat.
  3. Remove the chicken from the marinade and add it to the skillet. Cook for 5-7 minutes on each side until browned and cooked through. Remove the chicken from the pan and set aside.
  4. In the same skillet, add the sliced onions and bell peppers. Sauté for about 3-4 minutes until they are tender but still crisp.
  5. Prepare the Sauce: In a small bowl, mix cornstarch and water to create a slurry. Add the reserved marinade to the skillet with the vegetables and bring it to a simmer. Stir in the cornstarch slurry and cook until the sauce thickens.
  6. Combine: Add the cooked chicken back into the skillet along with the pineapple chunks. Stir everything together, allowing the flavors to meld for 2-3 minutes.
  7. Serve: Once heated through, remove from heat and garnish with green onions and sesame seeds.
  8. Enjoy: Serve your Sweet Hawaiian Chicken over rice or noodles for a complete meal.
