- 1.5 pounds boneless, skinless chicken thighs or breasts
- 1 cup pineapple juice
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1 tablespoon minced garlic
- 1 tablespoon grated ginger
- 1 cup fresh pineapple chunks
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1/2 onion, sliced
- 2 tablespoons vegetable oil
- 1 tablespoon cornstarch
- 2 tablespoons water
- Green onions, for garnish
- Sesame seeds, for garnish
Instructions
- In a bowl, combine pineapple juice, soy sauce, brown sugar, garlic, and ginger. Add the chicken and marinate for at least 30 minutes.
- Heat vegetable oil in a large skillet over medium-high heat.
- Remove the chicken from the marinade and add it to the skillet. Cook for 5-7 minutes on each side until browned and cooked through. Remove the chicken from the pan and set aside.
- In the same skillet, add the sliced onions and bell peppers. Sauté for about 3-4 minutes until they are tender but still crisp.
- Prepare the Sauce: In a small bowl, mix cornstarch and water to create a slurry. Add the reserved marinade to the skillet with the vegetables and bring it to a simmer. Stir in the cornstarch slurry and cook until the sauce thickens.
- Combine: Add the cooked chicken back into the skillet along with the pineapple chunks. Stir everything together, allowing the flavors to meld for 2-3 minutes.
- Serve: Once heated through, remove from heat and garnish with green onions and sesame seeds.
- Enjoy: Serve your Sweet Hawaiian Chicken over rice or noodles for a complete meal.
