Description

This slow cooker swamp potatoes recipe went viral on TikTok for a reason! Packed with smoked sausage, tender potatoes, and green beans. It’s a flavorful one pot Southern meal you’ll want to make again and again.


Ingredients

  • 3 pounds golden potatoes (cubed)
  • 1 Medium onion (diced)
  • 2 cloves garlic
  • 10 oz Diced tomatoes with Green Chilies (Rotel)
  • 1 Tablespoon Olive Oil
  • 1 teaspoon Cajun Seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 Pound Smoked sausage (Sliced)
  • 1 pound green beans
  • 1 packet onion soup mix
  • 1/2 cup butter

Instructions

  1. Cut potatoes in fourths and place them on the bottom of a slow cooker.
  2. Place diced onions, minced garlic and can of rotel on top of potatoes. Mix together.
  3. Drizzle Olive oil over the mixture. Sprinkle with cajun seasoning, salt and pepper. Toss well.
  4. Place the sliced sausage on top of the potatoes.
  5. Place the fresh green beans on top of the sausage.
  6. Sprinkle the top with onion soup mix and place a stick of butter on top.
  7. Place the lid on top of the crock pot and cook on low for 6 hours, or until the potatoes are tender. Stir about halfway through the cooking process.

  • Use your favorite smoked sausage for added flavor.
