This slow cooker swamp potatoes recipe went viral on TikTok for a reason! Packed with smoked sausage, tender potatoes, and green beans. It’s a flavorful one pot Southern meal you’ll want to make again and again.
Ingredients

- 3 pounds golden potatoes (cubed)
- 1 Medium onion (diced)
- 2 cloves garlic
- 10 oz Diced tomatoes with Green Chilies (Rotel)
- 1 Tablespoon Olive Oil
- 1 teaspoon Cajun Seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 Pound Smoked sausage (Sliced)
- 1 pound green beans
- 1 packet onion soup mix
- 1/2 cup butter
Instructions
- Cut potatoes in fourths and place them on the bottom of a slow cooker.
- Place diced onions, minced garlic and can of rotel on top of potatoes. Mix together.
- Drizzle Olive oil over the mixture. Sprinkle with cajun seasoning, salt and pepper. Toss well.
- Place the sliced sausage on top of the potatoes.
- Place the fresh green beans on top of the sausage.
- Sprinkle the top with onion soup mix and place a stick of butter on top.
- Place the lid on top of the crock pot and cook on low for 6 hours, or until the potatoes are tender. Stir about halfway through the cooking process.
Notes
- Use your favorite smoked sausage for added flavor.
- Feel free to adjust the seasoning to your taste.
