Ingredients

  • For the Sushi Rice:
    • 2 cups sushi rice
    • 2 1/2 cups water
    • 1/4 cup rice vinegar
    • 2 tablespoons sugar
    • 1 teaspoon salt
  • For the Filling:
    • 1 lb imitation crab meat (or cooked shrimp)
    • 1/2 cup mayonnaise
    • 2 tablespoons sriracha (adjust for spice preference)
    • 1 tablespoon soy sauce
    • 1 tablespoon sesame oil
    • 1 green onion (finely chopped)
    • 1/2 cup cream cheese (softened)
  • For Topping:
    • 1/2 cup shredded nori (seaweed sheets)
    • 1/2 cup shredded mozzarella cheese
    • Sliced green onions (for garnish)
    • Extra sriracha (for drizzling, optional)

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 18–20 minutes or until the rice is tender and water is absorbed. Remove from heat and let it sit covered for an additional 10 minutes.
  3. In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice. Allow it to cool slightly.
  4. In a large bowl, combine the imitation crab meat (or shrimp), mayonnaise, sriracha, soy sauce, sesame oil, green onion, and cream cheese. Mix until well combined.
  5. Preheat your oven to 350°F (175°C).
  6. In a baking dish (approximately 9×13 inches), spread the sushi rice evenly across the bottom.
  7. Spoon the crab mixture over the rice, spreading it evenly.
  8. Sprinkle the shredded mozzarella cheese on top, followed by the shredded nori.
  9. Bake in the preheated oven for 20–25 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven and let it cool slightly. Garnish with sliced green onions and drizzle with extra sriracha if desired.
  11. Serve warm, either by scooping it out with a spoon or cutting it into squares. Enjoy this delightful dish!
