- 1 cup shredded mozzarella cheese
- ½ cup sun-dried tomato pesto
- 2 tablespoons butter (softened)
- ¼ cup grated Parmesan cheese (optional)
- Fresh basil leaves (for garnish, optional)
Instructions
- Spread a thin layer of softened butter on one side of each slice of bread.
- On the unbuttered side of two slices, spread a generous amount of sun-dried tomato pesto.
- Sprinkle shredded mozzarella cheese evenly over the pesto.
- Place the remaining slices of bread on top, buttered side facing out.
- Preheat a skillet over medium heat.
- Place the sandwiches in the skillet and cook for about 3-4 minutes or until golden brown.
- Carefully flip the sandwiches and cook for another 3-4 minutes, ensuring the cheese melts completely.
- If desired, sprinkle grated Parmesan cheese on the top side of the sandwich during the last minute of cooking for added flavor.
- Once both sides are golden brown and the cheese is melted, remove the sandwiches from the skillet.
- Cut the sandwiches in half and serve warm, garnished with fresh basil leaves if desired.
