Ingredients

  • 2 cups fresh strawberries (sliced)
  • 4 cups mixed greens (such as spinach, arugula, or spring mix)
  • 1/2 cup sliced almonds (or pecans)
  • 1/4 cup red onion (thinly sliced)
  • 1/4 cup feta cheese (crumbled, optional)
  • For the Poppy Seed Dressing:
  • 1/3 cup mayonnaise
  • 1/4 cup plain Greek yogurt (or sour cream)
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon poppy seeds
  • Salt and pepper (to taste)

Instructions

  1. In a small bowl, whisk together the mayonnaise, Greek yogurt, honey, apple cider vinegar, poppy seeds, salt, and pepper until smooth. Set aside.
