Strawberry Poppy Seed Rotisserie Chicken Salad Recipe

- 2 cups rotisserie chicken (shredded or diced)
- 2 cups fresh strawberries (sliced)
- 4 cups mixed greens (such as spinach, arugula, or spring mix)
- 1/2 cup sliced almonds (or pecans)
- 1/4 cup red onion (thinly sliced)
- 1/4 cup feta cheese (crumbled, optional)
- For the Poppy Seed Dressing:
- 1/3 cup mayonnaise
- 1/4 cup plain Greek yogurt (or sour cream)
- 2 tablespoons honey
- 1 tablespoon apple cider vinegar
- 1 tablespoon poppy seeds
- Salt and pepper (to taste)
Instructions
- In a small bowl, whisk together the mayonnaise, Greek yogurt, honey, apple cider vinegar, poppy seeds, salt, and pepper until smooth. Set aside.
- In a large bowl, combine the shredded rotisserie chicken, sliced strawberries, mixed greens, sliced almonds, and red onion.
- Drizzle the poppy seed dressing over the salad and toss gently to combine.
- If desired, sprinkle crumbled feta cheese on top.
