- 1 ½ cups quick oats
- 2/3 cup flour
- ½ cup sugar
- ½ tsp ground cinnamon
- ½ tsp baking powder
- ¼ tsp salt
- ½ cup oil (coconut oil or melted butter)
- 2 ½ cups diced strawberries
- 1 ½ tsp cornstarch
- 1 tbsp pure maple syrup
Instructions
- Preheat oven to 350°F (175°C). Grease an 8-inch baking pan.
- In a bowl, mix oats, flour, cinnamon, salt, baking powder, and sugar.
- Stir in oil or melted butter until combined.
- Press 2/3 of the mixture into the pan.
- In another bowl, mix strawberries, cornstarch, and maple syrup; spread this mixture over the base.
- Crumble the remaining dough on top and press gently.
- Bake for 45 minutes, allow to cool, then refrigerate until chilled for easier cutting.
Notes
For a dairy-free option, replace butter with coconut oil. Customize with other fruits as desired.
