Description

Quick, easy, and delicious Strawberry Oatmeal Bars packed with nutritious strawberries, perfect for breakfast, snacks, or dessert.


Ingredients

  • 1 ½ cups quick oats
  • 2/3 cup flour
  • ½ cup sugar
  • ½ tsp ground cinnamon
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup oil (coconut oil or melted butter)
  • 2 ½ cups diced strawberries
  • 1 ½ tsp cornstarch
  • 1 tbsp pure maple syrup

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8-inch baking pan.
  2. In a bowl, mix oats, flour, cinnamon, salt, baking powder, and sugar.
  3. Stir in oil or melted butter until combined.
  4. Press 2/3 of the mixture into the pan.
  5. In another bowl, mix strawberries, cornstarch, and maple syrup; spread this mixture over the base.
  6. Crumble the remaining dough on top and press gently.
  7. Bake for 45 minutes, allow to cool, then refrigerate until chilled for easier cutting.

Notes

For a dairy-free option, replace butter with coconut oil. Customize with other fruits as desired.
