Ingredients

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour

  • 1/2 teaspoon salt
  • Zest of 1 lemon
  • 1 cup fresh strawberries, chopped
  • 1/4 cup lemonade concentrate, thawed
  • Powdered sugar for dusting (optional)

Instructions

  1. Cream butter and sugars until light and fluffy.
  2. Add eggs and vanilla, mixing well.
  3. Whisk dry ingredients in a separate bowl and combine with wet ingredients.
  4. Fold in lemon zest, strawberries, and lemonade concentrate.
  5. Chill the dough for 30 minutes.
  6. Preheat the oven to 350°F (175°C) and bake for 10-12 minutes.
  7. Cool and dust with powdered sugar if desired.

Notes

For vegan option, substitute unsalted butter with coconut oil or vegan butter, and replace eggs with flaxseed meal.
