A refreshing and delightful cake bursting with the flavors of strawberries and lemons, topped with a luscious strawberry lemonade frosting.

- 1 box of yellow cake mix
- 3 large eggs
- 1/2 cup of vegetable oil
- 1 cup of water
- 1/2 cup of lemonade
- Zest of one lemon
- 1 cup of unsalted butter, softened
- 4 cups of powdered sugar
- 1/4 cup of lemonade
- 1 cup of pureed fresh strawberries
- A pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine yellow cake mix, eggs, vegetable oil, water, lemonade, and lemon zest. Mix on medium speed for about 2 minutes until smooth.
- Pour the batter into a greased 9×13-inch baking pan or two 9-inch round cake pans. Bake for 30-35 minutes, or until a toothpick comes out clean.
- Once baked, cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- For frosting, beat softened butter until creamy. Gradually add powdered sugar, then mix in lemonade, strawberry puree, and salt until desired consistency.
- Frost the cooled cake, adding extra frosting between layers if using two cakes. Garnish with fresh strawberries.
Notes
Use fresh strawberries for the best flavor. Allow the frosted cake to sit for about 30 minutes before serving to enhance flavors.
