Description

A creamy and flavorful Strawberry Cheesecake with a homemade strawberry puree, perfect for summer gatherings.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 4 (8-ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1 cup strawberry puree
  • Fresh strawberries for garnish (optional)

Instructions

  1. Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. Combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Press into the bottom of the pan.
  3. Beat cream cheese until smooth; add 1 cup sugar and vanilla, mixing well. Add eggs, one at a time, mixing well after each addition.
  4. Stir in sour cream and strawberry puree until just combined.
  5. Pour cheesecake mixture over the crust. Bake for 60-70 minutes or until slightly jiggly in the center.
  6. Cool in the oven with the door cracked for 1 hour, then refrigerate for at least 4 hours. Top and serve.

Notes

Allow ingredients to reach room temperature for better blending. For creamier texture, consider a water bath during baking.
