Description

A quick and delicious Steak Pasta Salad that combines hearty steak with vibrant veggies, perfect for weeknight dinners or gatherings.


Ingredients

  • 8 ounces bite-sized pasta (fusilli or lumaconi)
  • 15 to 18 spears asparagus, chopped
  • 1 cup well-seasoned steak, cooked and sliced thinly
  • 1/2 cup cooked bacon, chopped
  • 1/3 cup shredded Parmigiano Reggiano
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2 teaspoons apple cider vinegar

Instructions

  1. Cook the pasta in a pot of boiled salted water for 10 minutes until al dente. Reserve a cup of pasta water, then drain.
  2. While the pasta cooks, chop the asparagus and steam for 3 to 5 minutes until bright green and tender.
  3. In a medium bowl, mix mayonnaise, sour cream, and apple cider vinegar until smooth.
  4. Toss the cooled pasta with the dressing, then add steak, bacon, Parmigiano Reggiano, and asparagus. Mix gently.
  5. Garnish with fresh cracked black pepper and serve immediately.
