Description

Create spooky and delicious eyeball truffles for Halloween. These no-bake treats feature a rich chocolate center, a white candy coating, and creepy eye decorations, perfect for parties or bake sales.

Ingredients

Scale
  • 1 package (14.3 oz) chocolate sandwich cookies (like Oreos)
  • 4 oz (½ block) cream cheese, softened
  • 10 oz white candy melts or white chocolate chips
  • Red food coloring or red decorating gel
  • Mini candy eyes or dark chocolate chips
  • Optional: colored food gel for iris (green, blue, etc.)
  • Optional: sprinkles, edible markers, or decorative pens

Instructions

  1. Pulse chocolate sandwich cookies in a food processor until finely crushed. Mix in softened cream cheese until fully combined to create the truffle base.
  2. Scoop the mixture into tablespoon-sized portions and roll them into balls. Place on a parchment-lined baking sheet and chill in the refrigerator for 30 minutes or freeze for 15 minutes.
  3. Melt white candy melts or white chocolate chips in a microwave-safe bowl in 30-second increments, stirring in between until smooth. Dip each chilled truffle ball into the melted coating, ensuring it is fully coated. Return to the tray and let the coating harden slightly.
  4. Before the chocolate coating sets fully, press a candy eye or chocolate chip into the center of each truffle to create the pupil. Use red food gel to add bloodshot veins and optional colored food gel for the iris.
  5. Chill the decorated truffles until fully set. Arrange them on a platter with spooky props or serve in mini Halloween cupcake liners for a festive effect.

Notes

  • No food processor? Crush cookies in a zip-top bag with a rolling pin.
  • Store undecorated truffles in the fridge for up to 2 days or freeze for up to 1 month.
  • Add peanut butter, mint extract, or pumpkin spice to the base mixture for unique flavors.
  • Use parchment paper to prevent sticking and make cleanup easy.
  • Melt chocolate in short bursts and stir frequently to avoid overheating, clumping, or scorching.
