Ingredients

- 6 cups fresh baby spinach
- 2 cups strawberries, hulled and sliced
- 1/2 cup red onion, thinly sliced
- 1/2 cup crumbled feta cheese (optional)
- 1/4 cup walnuts, chopped (or pecans)
- 1/4 cup balsamic vinegar
- 1/2 cup olive oil
- 1 teaspoon honey or maple syrup
- Salt and pepper to taste
Instructions
- Wash and spin the baby spinach under cool, running water, then dry.
- Hull and slice strawberries; thinly slice red onion.
- In a small bowl, whisk together balsamic vinegar, olive oil, honey, salt, and pepper.
- In a large salad bowl, combine spinach, strawberries, red onion, walnuts, and feta; drizzle with dressing and toss gently.
- Serve immediately or refrigerate without dressing until ready to serve.
