Description

A refreshing Spinach Strawberry Salad drizzled with homemade balsamic dressing, perfect for any occasion.


Ingredients

  • 6 cups fresh baby spinach
  • 2 cups strawberries, hulled and sliced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup crumbled feta cheese (optional)
  • 1/4 cup walnuts, chopped (or pecans)
  • 1/4 cup balsamic vinegar
  • 1/2 cup olive oil
  • 1 teaspoon honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. Wash and spin the baby spinach under cool, running water, then dry.
  2. Hull and slice strawberries; thinly slice red onion.
  3. In a small bowl, whisk together balsamic vinegar, olive oil, honey, salt, and pepper.
  4. In a large salad bowl, combine spinach, strawberries, red onion, walnuts, and feta; drizzle with dressing and toss gently.
  5. Serve immediately or refrigerate without dressing until ready to serve.
