Description

Savory meatballs filled with gooey mozzarella and packed with spinach and garlic flavors.

Ingredients

Scale
  • 1 lb ground beef (or a mix of beef and pork)
  • 1 cup fresh spinach, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/2 tsp salt
  • 1 cup mozzarella cheese, cubed

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Dice your garlic and chop the spinach into small pieces.
  3. In a large bowl, combine the ground meat, spinach, garlic, breadcrumbs, Parmesan cheese, the egg, and salt. Mix until well combined.
  4. Take a portion of the meat mixture and flatten it in your palm. Place a cube of mozzarella in the center and wrap the meat around it, shaping it into a ball.
  5. Place the meatballs on a parchment-lined baking sheet and bake for 20-25 minutes, until cooked through and nicely browned on the outside.
  6. Serve warm with your favorite tomato sauce or tossed over pasta.

Notes

For a lighter option, substitute ground beef with ground turkey. Ensure that meat isn’t over-mixed for tender meatballs.
