Description

Spicy Sausage Rigatoni is a comforting Italian-American pasta dish featuring rigatoni pasta tossed in a rich and creamy tomato sauce with spicy ground Italian sausage, fragrant sautéed onions, garlic, and a hint of red pepper flakes for heat, finished with Parmesan cheese and fresh parsley.

  • 1/2 lb. Rigatoni
  • 1/2 lb. Ground Italian Sausage
  • 1 cup Red Onion, chopped
  • 3 Garlic Cloves, minced
  • 1/3 cup Tomato Paste
  • 1 cup Heavy Cream
  • 1/2 cup Parmesan Cheese, grated
  • 12 tsp Red Pepper Flakes
  • 1/2 tsp Salt
  • 1 tbsp Butter
  • 1 tbsp Olive Oil
  • 2 tbsp Fresh Parsley, chopped

Instructions

  1. Heat a large skillet over medium heat and cook the ground Italian sausage until completely browned and cooked through. Use a spoon to break up the meat as it cooks. Once done, transfer the sausage to a paper towel-lined plate to drain excess grease. Carefully wipe down the skillet with paper towels to remove remaining grease.
  2. Bring a large pot of salted water to a boil. Add rigatoni and cook according to package instructions until al dente. Drain the pasta and set it aside while you prepare the sauce.
  3. In the same cleaned skillet, add butter and olive oil over medium-low heat. Add the chopped red onions and cook until they become soft and translucent, about 5 minutes. Then add minced garlic and cook for another minute until fragrant.
  4. Stir in the tomato paste, salt, and chopped fresh parsley into the skillet with the onions and garlic. Slowly whisk in the heavy cream, mixing thoroughly until the sauce is smooth and fully combined. Then stir in the grated Parmesan cheese and red pepper flakes, adjusting the amount based on your preferred spice level.
  5. Return the cooked sausage to the skillet and add the drained rigatoni. Stir everything together to coat the pasta evenly with the creamy tomato sausage sauce.
  6. Garnish with extra fresh parsley and Parmesan cheese if desired. Serve immediately and enjoy a hearty and spicy pasta meal.
