Description

A quick and flavorful dish featuring spicy sausage and sautéed peppers.

Ingredients

Scale
  • 1 pound spicy Italian sausage (or your preferred sausage)
  • 1 tablespoon olive oil
  • 1 medium onion (sliced)
  • 2 bell peppers (any colors, sliced)
  • 2 cloves garlic (minced)
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 teaspoon Italian seasoning
  • Salt and pepper (to taste)
  • 1 can (14.5 ounces) diced tomatoes (with juices)
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Heat Oil: In a large skillet, heat the olive oil over medium heat.
  2. Brown the Sausage: Add the spicy Italian sausage to the skillet. Cook, breaking it apart with a spoon, until browned and cooked through, about 5–7 minutes. Remove the sausage from the skillet and set aside.
  3. Sauté Onions and Peppers: In the same skillet, add the sliced onion and bell peppers. Sauté for about 5 minutes until they start to soften.
  4. Add Garlic and Seasonings: Stir in the minced garlic, red pepper flakes, Italian seasoning, salt, and pepper. Cook for an additional 1–2 minutes until the garlic is fragrant.
  5. Add Sausage and Tomatoes: Return the cooked sausage to the skillet. Add the can of diced tomatoes (with juices) and stir to combine.
  6. Simmer: Let the mixture simmer for about 5–7 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  7. Garnish and Enjoy: Remove from heat and garnish with chopped fresh parsley. Serve the spicy sausage and pepper mixture over rice, pasta, or enjoy it on its own.

Notes

  • This dish can be served over rice, pasta, or on its own.
  • Adjust the level of spice by modifying the amount of red pepper flakes.
