- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp ground ginger
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 2 eggs
- 1/4 cup molasses
- 1 tsp vanilla extract
- 1 cup grated pear
- 1/4 cup chopped crystallized ginger
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- Whisk flour, baking soda, ginger, cinnamon, nutmeg, and salt in a bowl.
- Cream butter and brown sugar until light. Beat in eggs one at a time.
- Stir in molasses and vanilla. Fold in grated pear and crystallized ginger.
- Add dry ingredients to wet mixture, mixing until just combined.
- Pour batter into prepared pan. Bake for 50-60 minutes or until a toothpick comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack.
