Description
Juicy steak bites and tender potatoes, all cooked in one glorious pan with a punch of garlic herb butter.
Ingredients

- 1.5 lbs beef sirloin steak, cut into 1-inch cubes
- 1.5 lbs Yukon Gold potatoes, cut into ½-inch cubes
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 1 tsp fresh thyme leaves
- Salt and freshly ground black pepper to taste
- 1 tbsp olive oil (optional, for searing)
Instructions
- Prepare the garlic herb butter by combining unsalted butter, minced fresh garlic, chopped fresh parsley, fresh thyme leaves, salt, and black pepper.
- Cube the sirloin steak into 1-inch pieces.
- Cube the Yukon Gold potatoes into ½-inch to ¾-inch pieces.
- If desired, microwave the cubed potatoes for 2-3 minutes until slightly tender.
- Heat a skillet over high heat. Add olive oil if using.
- Sear the steak cubes in batches to avoid crowding the pan. Cook until a good crust forms.
- Remove steak from the skillet and set aside.
- Add the prepared potatoes to the skillet and cook until tender and crispy-tender, stirring occasionally.
- Return the seared steak bites to the skillet with the potatoes.
- Add the prepared garlic herb butter to the skillet and stir to coat the steak and potatoes.
- Cook for another minute or two until the butter is melted and the steak is cooked through.
- Let the steak rest for a minute or two before serving.
