Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1/2 cup cream cheese, softened
  • 3/4 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup chopped fresh strawberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream together butter, cream cheese, and sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until fully incorporated.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Gently fold in the chopped strawberries.
  7. Drop spoonfuls of dough onto a baking sheet lined with parchment paper, about 2 inches apart.
  8. Bake for 12-15 minutes or until the edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack.

Notes

For best flavor, use ripe strawberries and quality butter and cream cheese. You can make the dough a day in advance and chill before baking.
