Irresistible Snow Crab & Fennel Chili Toast for Home Chefs

- 1/2 bulb fennel
- 1/2 small red onion
- 1/2 small chili
- 1 tablespoon minced tarragon
- 1 tablespoon minced chives
- 1 tablespoon olive oil
- 3/4 cup New Brunswick Snow Crab
- 2 tablespoons fresh dill leaves
- 1 small loaf bread
- 1 1/2 tablespoons prepared pickled mustard seeds
- 1/2 lemon juice
- Sea salt (to taste)
- Cracked black pepper (to taste)
- 1 tablespoon lemon juice
- 1 teaspoon Dijon
- 2 cloves garlic
- 1 cup neutral oil
- Sea salt (to taste)
Instructions
- Prepare the mayo by combining the egg yolk, Dijon mustard, lemon juice, and minced garlic in a bowl. Pulse with an immersion blender for about 30 seconds until slightly thickened.
- With the blender running on low, slowly stream in the neutral oil. Continue blending until the mixture thickens and emulsifies.
- In a separate bowl, combine the fennel, red onion, chili, tarragon, chives, and olive oil. Mix in a generous pinch of salt and about 2 tablespoons of your homemade mayo.
- Gently fold in the New Brunswick snow crab until evenly coated without breaking apart.
- Assemble the toast by piling the salad onto the toasted bread, garnishing with dill, chives, black pepper, and a squeeze of lemon juice.
