- 3 cloves garlic, minced
- 2 cans (15 oz each) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (28 oz) crushed tomatoes
- 1 can (6 oz) tomato paste
- 2 cups beef or vegetable broth
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup corn (frozen or canned)
- Optional toppings: shredded cheese, sour cream, chopped green onions, jalapeños
Instructions
- In a skillet over medium heat, brown the ground beef or turkey until cooked through. Drain excess fat and set aside.
- In your slow cooker, combine the browned meat, chopped onion, and minced garlic.
- Stir in the kidney beans, black beans, crushed tomatoes, and tomato paste.
- Add the beef or vegetable broth to the mixture.
- Sprinkle in chili powder, cumin, smoked paprika, salt, and black pepper. Stir until well mixed.
- Toss in the corn and mix again to incorporate all ingredients evenly.
- Cover the slow cooker with the lid and set it to cook on low for 6-8 hours or high for 3-4 hours.
- Once cooking time is up, check the chili. It should be thick and flavorful. If needed, adjust seasoning.
- Spoon the chili into bowls and top with your favorite toppings, if desired.
