  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (28 oz) crushed tomatoes
  • 1 can (6 oz) tomato paste
  • 2 cups beef or vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup corn (frozen or canned)
  • Optional toppings: shredded cheese, sour cream, chopped green onions, jalapeños

Instructions

  1. In a skillet over medium heat, brown the ground beef or turkey until cooked through. Drain excess fat and set aside.
  2. In your slow cooker, combine the browned meat, chopped onion, and minced garlic.
  3. Stir in the kidney beans, black beans, crushed tomatoes, and tomato paste.
  4. Add the beef or vegetable broth to the mixture.
  5. Sprinkle in chili powder, cumin, smoked paprika, salt, and black pepper. Stir until well mixed.
  6. Toss in the corn and mix again to incorporate all ingredients evenly.
  7. Cover the slow cooker with the lid and set it to cook on low for 6-8 hours or high for 3-4 hours.
  8. Once cooking time is up, check the chili. It should be thick and flavorful. If needed, adjust seasoning.
