- 1 ½ cups barbecue sauce (your favorite such as Sweet Baby Ray’s, Trader Joe’s, mild, spicy, garlicky, etc.)
- ¼ cup honey
- 1 tablespoon minced garlic (or to taste, about 4–5 cloves, finely minced)
- 2 pounds boneless skinless chicken thighs
- Green onions (sliced into thin rounds; optional for garnishing)
- Sesame seeds (optional for garnishing)
Instructions
- Spray the insert of your 6-quart or 7-quart slow cooker with cooking spray, although it’s optional.
- Add the barbecue sauce, honey, and garlic, and stir to combine.
- Remove approximately 1/2 cup of the sauce, cover, and place in the refrigerator for later use.
- Add the chicken and toss to coat it evenly in the sauce.
- Arrange the chicken in as even of a flat layer as possible.
- Cover and slow cook on HIGH for about 2 1/2 to 3 hours, or on LOW for about 5 to 6 hours, until the internal temperature of the chicken reaches 165F.
- If desired, shred the chicken after cooking by placing it on a cutting board and using two forks.
- Add the reserved 1/2 cup sauce mixture to the shredded chicken and toss to coat.
- Garnish with green onions, sesame seeds, salt, pepper, and red pepper flakes if desired.
- Serve over rice, mashed potatoes, with veggies, in enchiladas, tortillas, or sliders.
