- 4 boneless, skinless chicken thighs
- 1 cup dry red wine
- 3 tablespoons Dijon mustard
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
- 1 tablespoon fresh rosemary (or 1 teaspoon dried rosemary)
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Gather all ingredients and measure them out.
- In a skillet, heat olive oil over medium-high heat. Sear the chicken thighs for about 3–4 minutes on each side until browned. This step enhances the flavor but is optional.
- In the same skillet, add chopped onion and garlic. Sauté for 2–3 minutes until softened.
- In a bowl, combine the red wine, Dijon mustard, chicken broth, thyme, rosemary, salt, and pepper. Whisk until smooth.
- Place the seared chicken thighs at the bottom of the slow cooker. Pour the sautéed onions and garlic over the chicken, followed by the sauce mixture.
- Cover the slow cooker and cook on low for 6–8 hours or high for 4–5 hours. The chicken should be tender and easily pull apart with a fork.
- About 30 minutes before serving, taste the sauce and adjust seasoning if needed.
- Once cooked, remove the chicken and let it rest for a few minutes. Stir in chopped parsley before serving.
