Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 cup dry red wine
  • 3 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
  • 1 tablespoon fresh rosemary (or 1 teaspoon dried rosemary)
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Gather all ingredients and measure them out.
  2. In a skillet, heat olive oil over medium-high heat. Sear the chicken thighs for about 3–4 minutes on each side until browned. This step enhances the flavor but is optional.
  3. In the same skillet, add chopped onion and garlic. Sauté for 2–3 minutes until softened.
  4. In a bowl, combine the red wine, Dijon mustard, chicken broth, thyme, rosemary, salt, and pepper. Whisk until smooth.
  5. Place the seared chicken thighs at the bottom of the slow cooker. Pour the sautéed onions and garlic over the chicken, followed by the sauce mixture.
  6. Cover the slow cooker and cook on low for 6–8 hours or high for 4–5 hours. The chicken should be tender and easily pull apart with a fork.
  7. About 30 minutes before serving, taste the sauce and adjust seasoning if needed.
  8. Once cooked, remove the chicken and let it rest for a few minutes. Stir in chopped parsley before serving.
