- 1 pound ground beef (or turkey for a lighter option)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced (any color you prefer)
- 1 can (14.5 ounces) diced tomatoes (with juice)
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (15 ounces) black beans, drained and rinsed
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 cup beef broth (or vegetable broth)
- Optional toppings: shredded cheese, sour cream, chopped green onions, or cilantro
Instructions
- In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
- Add the onion, garlic, and bell pepper to the skillet. Sauté until softened, about 3-4 minutes.
- In the slow cooker, combine the browned meat and sautéed vegetables.
- Stir in the diced tomatoes, kidney beans, and black beans.
- Add the chili powder, cumin, paprika, salt, and black pepper. Mix well to combine.
- Add the beef broth, stirring to ensure everything is well incorporated.
- Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, check the chilli for seasoning and consistency. Adjust if necessary.
- Once cooked, ladle the chilli into bowls and add desired toppings.
