Ingredients

  • 1 pound ground beef (or turkey for a lighter option)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (any color you prefer)
  • 1 can (14.5 ounces) diced tomatoes (with juice)
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup beef broth (or vegetable broth)
  • Optional toppings: shredded cheese, sour cream, chopped green onions, or cilantro

Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
  2. Add the onion, garlic, and bell pepper to the skillet. Sauté until softened, about 3-4 minutes.
  3. In the slow cooker, combine the browned meat and sautéed vegetables.
  4. Stir in the diced tomatoes, kidney beans, and black beans.
  5. Add the chili powder, cumin, paprika, salt, and black pepper. Mix well to combine.
  6. Add the beef broth, stirring to ensure everything is well incorporated.
  7. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.
  8. About 30 minutes before serving, check the chilli for seasoning and consistency. Adjust if necessary.
  9. Once cooked, ladle the chilli into bowls and add desired toppings.
