- 4 boneless, skinless chicken breasts
- 1 cup fresh or frozen cranberries
- 1 cup orange juice (freshly squeezed preferred)
- 1 tablespoon orange zest
- 2 tablespoons honey or maple syrup
- 1 tablespoon olive oil
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat olive oil over medium-high heat.
- Add the seasoned chicken breasts to the skillet. Cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add minced garlic and grated ginger. Sauté for about 1 minute until fragrant.
- Pour in the orange juice, add cranberries, and stir in the honey or maple syrup. Bring the mixture to a simmer.
- Stir in the orange zest, allowing the sauce to cook for about 5 minutes, or until the cranberries begin to burst and the sauce thickens slightly.
- Return the cooked chicken to the skillet, spooning the sauce over the top. Cook for an additional 2-3 minutes to heat through.
- Remove from heat and garnish with chopped parsley before serving.
