Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh or frozen cranberries
  • 1 cup orange juice (freshly squeezed preferred)
  • 1 tablespoon orange zest
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Add the seasoned chicken breasts to the skillet. Cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add minced garlic and grated ginger. Sauté for about 1 minute until fragrant.
  5. Pour in the orange juice, add cranberries, and stir in the honey or maple syrup. Bring the mixture to a simmer.
  6. Stir in the orange zest, allowing the sauce to cook for about 5 minutes, or until the cranberries begin to burst and the sauce thickens slightly.
  7. Return the cooked chicken to the skillet, spooning the sauce over the top. Cook for an additional 2-3 minutes to heat through.
  8. Remove from heat and garnish with chopped parsley before serving.
