Description
Quick and satisfying Skillet Beef and Cabbage Stir-Fry with Ginger-Scallion Sauce, ready in under 45 minutes!
Ingredients
Scale
- 1 lb Lean Ground Beef (85-90% lean)
- 4 cups Cabbage (thinly sliced)
- 1 cup Carrots (shredded or julienned)
- 1 medium Onion (chopped)
- 4 stalks Scallion Whites (chopped)
- 1/4 cup Low-Sodium Soy Sauce
- 2 tablespoons Rice Vinegar
- 1 tablespoon Toasted Sesame Oil
- 1 tablespoon Brown Sugar
- 1 tablespoon Cornstarch
- 1 tablespoon Fresh Ginger (grated)
- 3 cloves Garlic (minced)
- 1/2 teaspoon Crushed Red Pepper Flakes (optional)
- 2 tablespoons Toasted Sesame Seeds
- 2 stalks Scallion Greens (chopped)
Instructions
- Whisk together low-sodium soy sauce, rice vinegar, toasted sesame oil, brown sugar, cornstarch, grated ginger, and minced garlic until smooth and well combined.
- In a 12-inch skillet over medium-high heat, add the ground beef. Cook until browned and fully cooked, draining any excess fat but leaving about 1 tablespoon for flavor.
- Add the chopped onions and scallion whites to the skillet, stirring frequently until they soften and become fragrant, about 2-3 minutes.
- Stir in the shredded carrots and sliced cabbage, cooking for 5-7 minutes until the cabbage is wilted but still has a delightful crunch.
- Pour the prepared sauce into the skillet over the beef and vegetables. Stir everything together and cook for about 2 minutes, or until the sauce thickens and clings beautifully to the mixture.
- Take a moment to taste your stir-fry and adjust with additional rice vinegar or salt according to your liking.
- Serve the stir-fry over jasmine rice, brown rice, or noodles. Just before serving, garnish with scallion greens and a sprinkle of toasted sesame seeds for added crunch.
