- 10 small shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- ½ teaspoon salt
- 8 small corn tortillas
- 1 cup fresh pineapple, diced
- ¼ red onion, finely chopped
- ¼ cup cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add shrimp, cumin, paprika, and salt. Cook until the shrimp turn pink, about 2-3 minutes per side.
- In a mixing bowl, combine the diced pineapple, chopped red onion, cilantro, lime juice, salt, and pepper to make the salsa.
- Warm the corn tortillas in a pan or microwave.
- Assemble the tacos by placing shrimp in tortillas and topping with pineapple salsa. Serve immediately.
