Ingredients

  • 10 small shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • 8 small corn tortillas
  • 1 cup fresh pineapple, diced
  • ¼ red onion, finely chopped
  • ¼ cup cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add shrimp, cumin, paprika, and salt. Cook until the shrimp turn pink, about 2-3 minutes per side.
  3. In a mixing bowl, combine the diced pineapple, chopped red onion, cilantro, lime juice, salt, and pepper to make the salsa.
  4. Warm the corn tortillas in a pan or microwave.
  5. Assemble the tacos by placing shrimp in tortillas and topping with pineapple salsa. Serve immediately.
