Shrimp Scampi


Description

Shrimp scampi is an excellent and easy seafood dish that blends succulent shrimp with delicious butter and garlic. It’s a classic dish that can be made quickly. This dish is ideal for a casual dinner at home or any time you wish to wow your visitors with not any effort.

How to Make Shrimp Scampi

Ingredients:

  • 1 lb. large shrimp deveined and peeled
  • 4 cloves garlic, minced
  • 1 cup of white wine (optional)
  • Fresh lemon juice, 1/4 cup
  • 1/4 cup butter that is unsalted
  • 2 tbsp olive oil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper as desired
  • 2 tablespoons fresh parsley, chopped
  • Baked pasta, crispy bread (for serving)

Instructions

Cook the butter and olive oil in a large saucepan at medium-high heat until the butter is bubbly and melting.  In the skillet, add minced garlic as well as the red pepperflakes (if you are using). Cook for 1-2 minutes until fragrant, making sure not to let the garlic burn. In the same skillet, add the shrimp in one layer. Cook for about 2 minutes each side until they become opaque and pink. Pour into white wine (if you are using) and allow it to simmer for about a minute, slowing down the heat. Add the freshly squeezed lemon juice, and then sprinkle with the salt and black pepper. Mix thoroughly in order to cover the shrimp with the sauce. Removing the pot from the heat and sprinkle fresh chopped parsley over the shrimp. Serve immediately with cooked pasta and toast to absorb all that delicious sauce!

How to Serve Shrimp Scampi

Serve the shrimp spaghetti hot.  It can be served on the prepared pasta to absorb the delicious sauce, or served with crispy bread to dip.  Sprinkle with extra parsley or a slice of lemon to add a bit more flavor.

How to Store Shrimp Scampi

If you are left with leftovers, let them cool completely. Place the shrimp spaghetti in an airtight container. You can store food in the refrigerator for a maximum of 2 days.  Cook slowly over the flame or using the microwave prior to serving.

Notes

Tips to Make Shrimp Scampi

  • Do not overcook the shrimp. They should be transparent and pink.
  • For a thicker sauce, you can add 2 tablespoons heavy cream towards the end.
  • You are welcome to add some cherry tomatoes or spinach to give it a more vibrant color and a savory taste.
