- 8 oz fresh mushrooms (sliced, such as cremini or button)
- 4 cups fresh spinach
- 2 tablespoons olive oil
- 2 cloves garlic (minced)
- Salt and pepper (to taste)
- 1 tablespoon balsamic vinegar (optional, for added flavor)
- Fresh parsley (chopped, for garnish, optional)
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Once the oil is hot, add the sliced mushrooms to the skillet.
- Sauté for 5–7 minutes, stirring occasionally, until the mushrooms are browned and tender.
- Stir in the minced garlic and cook for 1 minute, until fragrant.
- Add the fresh spinach to the skillet and cook for 2–3 minutes, stirring frequently, until the spinach is wilted.
- Season with salt and pepper to taste. If desired, drizzle with balsamic vinegar for added flavor.
- Remove from heat and garnish with fresh chopped parsley before serving.
