- 1 1/2 cups crushed chocolate sandwich cookies
- 1/4 cup melted butter
- 3 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup chocolate chips (semi-sweet or dark)
- Salted caramel sauce (for topping)
Instructions
- Preheat oven to 325°F (163°C).
- In a mixing bowl, combine crushed chocolate sandwich cookies and melted butter. Press this mixture into the bottom of a springform pan.
- In another bowl, beat softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
- Fold in chocolate chips until evenly distributed.
- Pour filling into the crust and bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
- Cool at room temperature for 30 minutes, then chill in the refrigerator for at least 4 hours.
- Before serving, drizzle with salted caramel sauce.
Notes
Make sure all ingredients are at room temperature to avoid lumps in the cheesecake.
