Ingredients

  • 2 lbs salmon fillet, skin removed
  • 1/2 cup breadcrumbs or almond flour
  • 1 large egg
  • 1/4 cup fresh parsley, finely chopped
  • 1/4 cup fresh cilantro, finely chopped
  • 2 cloves garlic, minced
  • Ripe avocados
  • Lemon juice
  • Salt
  • Optional spices like smoked paprika or cayenne pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine salmon, chopped parsley, cilantro, breadcrumbs (or almond flour), egg, and minced garlic. Mix well.
  3. Scoop out the mixture and form golf ball-sized portions, placing them on a parchment-lined baking sheet.
  4. Bake in the preheated oven for 15-20 minutes until golden brown.
  5. Prepare the creamy avocado sauce by blending ripe avocados, lemon juice, additional garlic, and salt until smooth.
  6. Serve the salmon balls warm with the avocado sauce drizzled on top or on the side for dipping.
